consumption of healthy foods is sensitive to increments of income and co-related variables, such as employment. The prevalent hypotheses are that overnutrition impacts mainly the urban
middle class as the poor consume less processed diets, and that the poor’s expenditure share on healthy foods — such as animal protein and beans, and vitamin-rich vegetables and fruits — is
comparatively smaller. Now, Michael Dolislager from the Messiah University and colleagues have systematically tested these hypotheses using household data covering a range of food groups in
Tanzania, Uganda and Nigeria. First, the authors analysed the shares of healthy and unhealthy foods in household consumption expenditure (from purchases, own production and gifts/transfers)
over the income gradations of households below and above the poverty line. Then, they explored the non-income determinants of those shares using national Living Standards Measurement Study
