Makes one 9-inch pie, serves 8 to 10
I grew up making cheesecake in a store-bought graham cracker crust, and I still prefer to make my cheesecakes in a pie pan. Without a springform pan, you don’t need to worry that water from
the water bath will leak in and spoil the bottom crust. Melting the cream cheese makes the filling slightly warm, so it will hold less air, which in turn makes it less likely to crack in the
heat of the oven. A final insurance policy against cracking is allowing the cheesecake to finish baking in the residual heat of the oven so it cools gradually.
Ingredients
Crust
1⅔ cups fine vanilla wafer crumbs, from about 45 vanilla wafersGraham cracker crumbs, from about 12 crackers2 tablespoons granulated or light brown sugar¼ teaspoon fine salt5tablespoons unsalted butter, melted
Cheesecake filling
16 ounces full-fat cream cheese, cut into 1-inch cubes¾ cup granulated sugar¼ teaspoon fine salt2 large eggs, at room temperature2 large egg yolks, at room temperature¼cup heavy cream, at room temperature1 tablespoon vanilla extract1½ teaspoons fresh lemon juice
For serving
1 cup heavy cream, whipped1 ounce dark chocolate, shaved
